Eats Lately

Breakfasts: I have 2-3 breakfasts I typically cycle through depending on my mood that morning.

This was 2 slices Ezekiel’s cinnamon raisin toast + butter, a fried egg, fresh berries, whole milk yogurt, and green juice.

I’ll be honest and admit that lunch is something I should work to add some more variety too. More often that not, I have a turkey sandwich at home.

One day, my mom and I went to The Rolling Pin in downtown Bartlesville. Their bread is my favorite 🙂

I didn’t have a whole lot of time between volunteering and counseling, so I made a quick stop at Subway. 

Whipped up a salad with feta cheese and poppyseed dressing with pretzels on the side one day at home. 


Made this yummy Mediterranean spaghetti squash a la cookieandkate for my parents one night. I left out the olives, added tomatoes and mozzarella cheese (more protein!), and put the squash back in for about 10 minutes after adding the salad and cheese to get the cheese nice and melty. Served with pita chips, hummus, and cucumber.

I had an unpictured hamburger + sweet potato fries at home last Saturday, and pizza at the Hideaway on Sunday.

Built our own burrito bowls a la Chipotle one hight. This had rice, beans, chicken, cheese, avocado, cilantro, peppers, and tomatoes.

Sushi! Sushi was a “go-to” meal in my disorder. My attitudes towards eating it were very maladaptive- first, I didn’t order enough to properly fuel myself. Second, there was a time when I would only eat out if it was to get sushi. Third, I had a rule that I could only eat it for dinner. Now, I know that sushi is one of my favorite foods. Because it’s not very dense, I make sure to have at least two rolls and some sort of appetizer with it. We grabbed it for lunch one day in Arizona (love breaking those ED rules!!), and I’m happy to say that I hadn’t had sushi since then when I went out for sushi with my parents (~3 weeks). I’ve been out to eat at plenty of restaurants besides sushi places since then, also. I’ll say that marks some good progress 🙂

I’m hoping to get back in to the swing of meal planning + prepping in the coming weeks. It’ll make the transition back to working easier for sure. Any go-to recipes you love to make? What has been the tastiest thing you have eaten lately?
