#DinnerforOne: Shrimp Pasta with Broccoli and Parmesan Cheese

Friends, life isĀ busy these days. I’m at the hospital by 7 AM everyday, and when I get home, I take Hope for walks, see friends, and go to any one of the activities I’ve recently joined.

Many individuals in this type of season can easily “wing it” when it comes to meals, and count on picking up quick options or simply snacking. In this season of my recovery, “winging it” is not an option. So having quick, easy meal options in my back pocket for those times when I finish walking Hope at 7 p.m. and don’t know what to make isĀ clutch in ensuring I fuel my body with what I need.

IĀ loveĀ this pasta for that. And the best part (in my opinion) is that you can make it in individual portions so you don’t waste food. Here’s what I use:

Frozen shrimp from Target

Frozen broccoliĀ 

Brown rice pasta

Parmesan cheese

Making the dish is easy and takes less than 15 minutes with no prep work required.

SautĆ©Ā the shrimp over medium heat until no longer translucentĀ 

 

While the shrimp cooks, steam the broccoli in the microwave. I put a serving in a bowl with water and “zap” it for about 7 minutes. Then, boil the noodles until tender.

Everything should finish at about the same time, and I simply drain the water from theĀ broccoli and noodles and return everything to the pan. Finish withĀ shaking with copious amounts of parmesan cheese!

Dinner is served!

Breakfast

I mixed up my breakfast! This is cinnamon oatmeal squares with almonds for some extra fat, blueberries, blackberries, milk, and an egg on the side for protein.Ā 

And then I didn’t and stuck with my favorite Ezekiel toast and oatmeal combinations.

Lunch

Rolling Pin, how I’ll miss you when I move back to OKC. This is a turkey sandwich on the best bread with a chocolate chip cookie.

Leftover Asian chicken soup from How Sweet Eats with some toasted whole wheat pita.

The usual chicken sandwich with some avocado and pretzels on the side

Dinners

Sheet pan dinner- I marinated chicken breasts in olive oil, lemon juice, thyme, and pepper and baked it with some roasted potatoes and a blend of carrots, radishes, broccoli, onion, and brussel sprouts. I had one white potato and one sweet potato.

 

I love this Asian chicken soup from How Sweet Eats. I had some pita bread and a kale salad (from a kit) with it.

I went out to eat with my parents in downtown Bartlesville one night. This chicken salad with candied pecans and bleu cheese sounded so good. I ordered a side of warm pita bread for carbs and also had a glass of wine while we waited for our table.

This meal isn’t as pretty-I had leftovers from the sheet pan dinner with a salad on the side. There weren’t enough leftover potatoes for this girl so I grabbed some crackers, too.

Shrimp and grits again! This was for Valentine’s Day/Ash Wednesday.

Snacks
